After trying various things for about seven years, my mazemen has evolved into a style where you eat noodles with the broth I learned from my master, layering the fresh aroma of the ingredients I learned in Kyoto, the aroma and texture of freshly cooked food.

Since we opened, we've always told our customers to mix the noodles well before eating, but the mixed noodles we serve now have the noodles and broth mixed together before serving, so even if you imagine it as layering the noodles, it's better to mix them lightly so you can feel the layers of aroma and texture even more, and it tastes delicious.

Mix until everything is evenly mixed,
I think you'll enjoy the changes depending on where you eat.

I try not to say "Mix it well!" I wonder why I didn't notice this. I suddenly realized this this morning when I was making a salad.
